Gluten-Free Vegan Double Chocolate Banana Bread Review
The recipe for this double chocolate banana bread is from the book The Elements of Baking by Katerina Cermaji. She has a degree in inorganic chemistry and uses it to make recipes that have the perfect balance of everything it needs to produce a wonderful result. Banana bread has always been a favorite of mine. Add dark chocolate and the banana bread becomes the best thing in the world. So, when I saw this recipe, I immediately wanted to try it. So, I tried it, and it turned out just as good as I had hoped it would.
To make it I set the oven to the right temp to start warming up and prepped my pan. Then, I measured out the ingredients and mashed my bananas. After I had my bananas mashed, I combined them with my butter, sugar (I replaced the brown sugar with coconut sugar because I was making it for someone with an allergy to refined sugar), milk, lemon, and vanilla. Once they are combined well, I then added the rest of my ingredients except the chocolate chips.
Once they are combined, I then add two thirds of the chocolate chips. Mix well and then pour into the pan and smooth out. After it is smooth I sprinkle the last of the chips on, place in the oven, and bake for an hour. Once the tester comes out clean, I remove it from the oven and let in cool in the pan for ten minutes before removing it and letting it cool the rest of the way on a cooling rack.
You can serve the bread warm or allow it to cool to room temperature first. I prefer it room temperature with some soy milk, but my friend enjoys it most warm straight from the oven. However, it is also really good warm with milk or by itself. How ever you serve it, it is sure to be a favorite and people will be begging to know the recipe.
I really enjoy this recipe. It has become my favorite banana bread recipe and if I need something to take to a get together this is always one of my first choices. My favorite part of this recipe is that most people can’t tell its gluten-free and vegan. It is also such an easy recipe to follow and turns into such a delicious loaf of bread that it has become my favorite thing to bake.
